Old time, it was difficult to have good diet around much snow at winter, People thought out how to make food efficiently.
"UCHIMAME" is one of that idea, made by soy beans grinded on millstone and dried.
It is used as traditional preserved food of soy beans, and served with Tofu and Aburaage on every meal.

"JODO-SHINSYU" and "Ho-onko"

And in Fukui , many temples are existed. So, Fukui is related with religious culture in their life.
Especially number of "JODO-SHINSYU" religious group is large. "JODO-SHINSYU" takes hold religious many events in their group, many people gathered there, so it has to serve a lot of dishes quickly and reasonably.

Among their events, "Ho-onko" is one of the largest religious events took hold at October-November. "UCHIMAME" is made in same season, so it was easy to get a lot of ingredients. so "UCHIMAME" was very useful food in "Ho-onko" dish.

Ho-onko refers to a memorial service which was held around the anniversary of the death of Shinran (1173 - 1262), the founder of Jodo Shinshu (True Pure Land Sect of Buddhism). It often takes hold at October-November, serve dish for people (about 50people).
